Mother’s Day Flower Cookies

It’s been a while since I have posted. Fortunately, I’ve been busy teaching my Wilton Method classes and this morning I finally had a chance to take a breath. There’s lots of exciting things coming up, but for today I wanted to concentrate on Mom.

She is the reason I’m here! The reason I write, bake, decorate and have a nutty brain that doesn’t stop creating!! LOL She is the best Mom ever! What I will make for her (instead of giving her flowers) was a small basket of flower cookies to have with her tea or coffee. This is the same recipe I used for the Spring Cookies, but instead of adding almond extract to Wilton’s Large Batch recipe: http://www.wilton.com/large-batch-roll-out-cookies/WLRECIP-64.html I used only vanilla and orange zest. Additionally, I made Wilton’s Royal Icing: http://www.wilton.com/royal-icing/WLRECIP-50.html#q=royal+icing&start=1 but to get a smooth texture, I strained the fresh squeezed orange juice into the recipe and added a pinch of salt. This combination works wonders to layer the flavors and tone down what can be an extremely sweet decorative topping.
